ASPARAGUS AND BABY TOMATO EGG WHITE OMELETTE

Eggs are a great part of a healthy diet, whether your trying to lose weight or build muscle. They are rich in Vitamin A, Vitamin B, especially Vitamin B12, Vitamin D, Vitamin E and Vitamin K and as well as a good source of Calcium, Iron, Iodine, Phosphorus and Zinc. Most of the protein is in the egg white (albumin), whilst most of the calories and nearly all the fat are in the egg yolk.

Niki's Healthy Asparagus & Roma Tomato Egg White Omelette Recipe

Serves 1-2 Prep 5 mins Cooking Time 20 mins


Ingredients

5 egg whites (free range)

1 tbs chopped fresh thyme

1 tbs chopped fresh oregano

10 asparagus spears

250g (8oz) baby roma tomatoes, halved

2 garlic cloves, crushed

1 tbs balsamic vinegar

1 tbs cold pressed olive oil

 

Method

Preheat oven to 180° C, 350°F or GAS Mark 4. Snap off woody ends of Asparagus and place on a non stick baking tray with halved tomatoes. Combine crushed garlic with balsamic and olive oil. Brush the asparagus and tomatoes with this mixture and then bake for about 15-20 minutes or until asparagus is tender. Whisk the egg whites till frothy adding thyme and oregano making sure they are well combined. Heat up your non stick pan (I prefer a crepe pan)o n a medium-high heat add a tiny bit of oil and then add your egg white mixture ensuring it spreads in a fairly thin layer in pan. When the underside has browned turn over and sprinkle with a little parmesan (optional) at this point, When underside has browned remove from heat, take your cooked vegetables and place half inside your omelette and fold it over. Plate up your omelette and serve remaining vegetables on the side.
