THIS WEEK IT'S

 

Niki's Scrumptious Omelette

 

Serves 4-6 Prep 20 mins      Cooking Time  about 20 minutes


 

Ingredients


1/4 cup (2oz) semi dried tomatoes, sliced

1/4 cup (2oz) sliced black olives

1/3 cup (2.6oz) lite ham/turkey

1/3 cup (2.6oz) grated lite tasty cheese

1/3 cup (2.6oz) red onion, chopped

handful of baby spinach

8 eggs, beaten (8 whole eggs or 6 egg whites + 2 whole eggs)

 

 

Method

 

1.When ready pop a little bit of olive oil in your pan or use a non stick pan without oil,  add the onion and ham and stir constantly until those aromas start to overwhelm you.


2.Once you get your focus again in about a minute or so you can begin to add the whisked egg to the pan, add your ingredients one by one and remember two hands are better than one. You'll notice that the omelette starts to set at the edge of the pan meaning it's almost done. It's at this precise moment that you sprinkle freshly ground aromatic black pepper and then add the cheese over the entire omelette whilst contemplating the eventual union between the omelette and your taste buds as they are bathed in a sea of flavour.


3.Oops I'm starting to drift away again....by this stage your oven has been set to 180° C (350°F OR Mark 4) at which point you will perform the crucial task of escorting your creation to the last stage of cooking which will take about 10 minutes to blissfully melt the cheese. Remember to use a pan that will not melt in the oven, been there and done that ! When omelette is a lovely golden colour remove from oven slice and serve. DELICIOUS !

 


  Now DON'T eat the whole thing! Just eat your portion size. Eat each mouthful slowly and savour the flavour and you will achieve satisfaction easily. Once you start to eat like this you'll find it's really quite easy to do.
