THIS WEEK IT'S SMOKED TROUT TARTS
Niki's Smoked Trout Tarts
Makes 6 Prep 20 mins Cooking 20 mins
Ingredients
olive oil to brush filo pastry 3 sheets filo pastry 1 smoked trout (about 250g), skinned, flaked 3 eggs, lightly beaten 1/4 cup (60ml) light milk 2 tbs light sour cream 2 tbs fresh dill, chopped 1/2 cup (60g) peas Method 1. Preheat oven to 180 degrees celsius. 2. Lightly oil a large 6 muffin tin. 3. Cut filo sheets in half and then lightly brush with oil. Fold in half and then in half again. Line the muffin tin with the filo squares. 4. Mix the trout with all the remaining ingredients and fill the filo with mixture. 5. Bake the tarts for about 20 minutes or until lightly browned or filling is set. 6. Serve hot or cold with a lovely green salad and ENJOY! Sometimes we complicate things by adding, modifying, subtracting when all you have to do is savour what you have available to you in it's simplest and most satisfying form. Replace the apple with a chocolate and you can go all day.
Eat peanuts from a tree in their natural state and once again there are only so many you can have before your body says NO, roast them, salt them, cover them in oil and chocolate and you you can keep on going, there is no end !
