Niki’s Spicy Chicken Skewers Recipe

Serves 4-6 Prep 20 mins Cooking Time about 12 - 14 minutes
Ingredients
800g ( 28oz) chicken thigh fillets, chopped into small pieces (2.5cm)
1 long red chilli, roughly chopped
1 long green chilli, roughly chopped
2 red birdseye (small) chillies, roughly chopped
3 garlic cloves, peeled and roughly chopped
1/4 cup (2oz) extra virgin olive oil
3 tbs fresh lemon juice
3 tsp sea salt flakes
3 tsp smoked paprika
3 tsp dried oregano
18 small bamboo skewers, soaked in a dish of cold water for at least 30 minutes.
Cooking Appliance
Grill or barbecue preheated to medium - high heat.
Method
- Make the marinade by processing the garlic and chillies till they are finely chopped. Add the olive oil and lemon juice, process until well combined and place into a bowl.
- Add the sea salt, smoked paprika and oregano, stir to combine.
- Stir the marinade through the chicken until well coated, Cover with cling wrap and refrigerate for at least 3 hours.
- Thread the marinated chicken onto the skewers and then grill or barbecue for about 6 -7 minutes each side or until cooked through. Serve warm or at room temperature with a lovely salad and enjoy !

These days we don't take the time to enjoy our food. We eat in the car, at the kitchen bench, at our desk or wherever and whenever we can squeeze that meal in to our busy days. This can lead to bad choices of calorie dense foods not to mention over eating because our meal is rushed.
We need to slow down, sit down and take pleasure in eating. Make a conscious decision to eat healthy, nutritious and tasty food. Take the time to prepare and eat the foods you know your body needs. Set the table for a change, maybe put on some music, have a chat with your family or friends over your meal. You’ll probably eat less, eat better quality food and enjoy the eating experience the way it should be enjoyed !
