Niki’s MINI TURKEY MEATLOAF Recipe
Serves 4 Prep 20mins Cooking Time about 30mins
Ingredients
500g (17.6oz) turkey mince
2 tbs extra virgin olive oil
2 garlic cloves, peeled and crushed
1 green apple, peeled, cored and grated
1 celery stalk, finely chopped
1 cup fresh wholemeal breadcrumbs
1 tbs fresh sage, finely chopped
1 egg, lightly beaten
12 slices prosciutto
2 tbs cranberry sauce
Baking Temperature
Method
Firstly heat the olive oil in a non stick fry pan, add red onion, garlic, celery and apple and cook for a few minutes till onion and celery are softened. When onion mixture has cooled slightly place turkey mince in a large bowl and add, onion mixture, bread crumbs, sage, and egg. Combine ingredients well, I like to use my hands. Now make 4 equal portions from your filling and mould into large egg or oval shapes. Wrap your filling with the prosciutto trying to make sure you cover them well. They are now ready to place on your baking tray that has been lined with baking paper. Heat your cranberry sauce gently and now brush your meatloaves well with the sauce. Bake in the oven for about 30 minutes and they are now ready to slice and serve. Some wonderful steamed vegetables would be a great healthy accompaniment. ENJOY!
